Its characteristics unfold best with red meat, game and stewed meats.

We recommend opening the bottle and decanting the wine prior to serving in wide crystal glass, Envoy this wine at18-20° C
Best consumption:
Within 8 years from the harvest
Additional info:
All the spes are followed with maximum attention to details:
Harvesting system: hand harvested grapes and transport to the cellar in small boxes.
Vinification: soft stemming and pressing; fermentation by selected yeast with temperature control in stainless steel vats and rémontages and délestages.
Maturation: first in stainless steel vats, then in medium toasted oak barrels and terracotta amphora . The wine is bottled avoiding strict filtration methods, which do impart translucency and clarity to a wine, but inevitably also destabilize its structure.
During the ageing in bottle, any sediment, dued to the crystallization of potassium salts - naturally occurred in grapes - should be considered the result of a normal evolution of a wine with a powerful structure and with a high concentration, intensified by the ageing in terracotta.
