The blend as a quest for balance
Each extra virgin oil has its own peculiarities, depending on the production area, the varieties chosen and the proportion of these, i.e. the blend.
Each variety in fact makes an important contribution to the character of an olive oil, just as it does for wines. The moment of blending is therefore a crucial moment to ensure the harmony of an extra virgin oil: olive oil is not just a condiment, but a true INGREDIENT.
Behind the blend
Plenum is the result of careful tasting and re-tasting, which this year led us to the Gambero Rosso award-winning blend of Frantoio, Moraiolo and Leccino.
>To get to this result, following the pressing, which takes place on the same day as the harvest, all the different production batches are kept separate and only after the careful tasting of each batch is the final blend defined.
>This process requires time and dedication, which is why Plenum is never marketed immediately after the harvest and we always ask our customers to wait a bit! Patience is a virtue that pays off…
