Liver Crostini

An appetizer that cannot be missing in any self-respecting Tuscan cuisine : toasted bread (without salt! – as per tradition), accompanied by chicken liver pâté. This paté is obtained from the less noble parts of the chicken, flavoured with aromatic herbs, capers, anchovies and, possibly, veal spleen.

To enhance the strong taste of the pâté, we suggest as a pairing our Erta al Mandorlo white wine, predominantly Verdicchio, with its dry, savoury and harmonious flavour, rich in characters that continue to evolve in the glass.
If you want to make the appetiser even more gourmet, you can accompany the crostini with an artichoke or mushroom preserve in olive oil, matching the final iodine touch of the wine.

Florentine-style crespelle with meat sauce

Also called ‘grandmother’s pezzole’ because of their shape, crespelle are a first course that is often the main character of Tuscan and especially Florentine tables at Christmas time. With a light, almost impalpable texture, they are covered with a tasty layer of béchamel sauce and meat sauce and filled with a ricotta and spinach filling.
